Honey Cornbread Muffins

Makes a dozen corn muffins.


1 cup Oak Manor organic Cornmeal 

1 Cup Oak Manor  organic All-purpose flour

1/2 cup organic Cane Sugar

1/2 tsp baking soda

1/2 tsp sea salt

1 cup organic milk or substitute

1/2 cup organic butter melted

2 large organic or free range eggs

1/4 cup local honey (3/8 cup for a little more moisture or honey flavour.)

Preheat oven to 375.

Prepare your pan or muffin tins by greasing with oil.

Mix the dry ingredients in a large bowl

In another bowl whisk together the liquid ingredients until well blended.

Add the liquid ingredients to the dry mixture and blend until just mixed.

Let sit for a couple minutes. (2-3)

Divide the batter into the pan. Bake for 15 minutes or until golden. 

Remove from tins after a few minutes and place on a rack to cool.
